Here is this easy recipe. Pick your favorite moist spice cake box mix that requires addition of oil. It will most likely require oil, water and eggs. Make the cake per the package directions except substitute pumpkin puree for the oil in these proportions: 3/4 of the oil measurement. That’s a bit confusing! If the recipe asks for 1 cup of oil use 3/4 cup pumpkin puree as a substitute instead. DO NOT add oil. OR if the cake mix asks for 1/2 cup oil use 1/4 cup plus 2 tablespoons of pumpkin instead. Again do not use the oil at all. But do add other ingredients called for on the box.
Bake according to box directions … make it a cake or cupcakes.
For the topping use a plain buttercream frosting with a sprinkle of cinnamon, or a dollop of whipping cream as an alternative.
